[From the Introduction.] This book is dedicated to the pleasures of the palate and the Greek gastronomic heritage. It aims to approach, both theoretically and practically, the unique history of Culinary Art spanning two and a half thousand years in this small, yet, intellectually fertile European country which gave birth to rhetoric, poetry, philosophy, architecture and, certainly, gastronomy.
