    Guideline filtration (depth filtration)
    • The filtration guideline was designed to serve as a tool for evaluating filtration equipment in the brewing industry. This edition focuses on depth filtration. An assessment of alternative filtration methods, with an emphasis on membrane filtration, will follow. Along with general data regarding filter parameters and performance, the guideline also provides information for assessing the quality of unfiltrate and filtrate samples. Instructions and equations for evaluating the filtration process round out the guideline. The working group for the MEBAK® filtration guideline was headed by Dr. Stefan Kreisz and Dr. Roland Pahl. They were supported by the following team: Dr. Heinz-Michael Anger, PD Dr. Hartmut Evers, Dr. Ulrich Gans, Dipl.-Ing. Reiner Gaub, Dipl.-Ing. Peter Gattermeyer, Prof. Dr. Fritz Jacob, Brm. Markus Luebbe, Dr. Stefan Lustig, Dipl.-Brm. Ulrich Sander and Dr. Andreas Zeller.       From Project Planning to Quality Assurance

      For decades, MEBAK® has focused on compiling, evaluating, verifying, and publishing brewery analysis methods. This volume dedicates itself to microbreweries, offering practical analysis methods and a framework for designing a microbrewery, from initial planning to technology selection for wort and beer production, and establishing quality control routines. It covers conventional topics like hygienic design and production while also addressing unique microbrewery processes, such as cold-side hopping, spontaneous fermentation, and maturation in wooden barrels. Economic principles, including standard business calculations and profit and loss statements, are discussed in detail, alongside regulations affecting the brewing industry, the Reinheitsgebot, and labeling requirements. The initiative for this book came from Dr. Gerd Bender, aiming to support the innovative microbrewing scene, particularly in quality control and hygiene. Dr. August Gresser managed the working group on microbreweries, expanding the topics covered. MEBAK® thanks all contributors for their efforts, especially Ing. (grad.) Sabine Bender and Dr. Gerd Bender, whose dedication was crucial in compiling and editing the text. The hope is that this compendium serves as a valuable resource for brewmasters and newcomers alike, guiding them in producing unique and flavorful beers.

      Richtlinie Sudwerkkontrolle
    • Die Richtlinie Filtration soll als Grundlage zur Bewertung von Filtrationsanlagen für Bier und bierähnliche Getränke (vorerst nur für Anschwemmfiltrationen, die Bewertung von Membranfiltrationen wird in einem zweiten Schritt folgen) in der Brauereiindustrie dienen. Sie liefert die Grundlage für die Beurteilung technischer Einrichtungen, die zum Filtrieren von oben genannten Getränken bestimmt oder im Rahmen der Filtrationsanlage mit diesen verkettet sind. Die Richtlinie hat den Zweck, sowohl Definitionen für die Abnahme und betriebswirtschaftliche Größen von Maschinen und Anlagen, als auch Grenzwertempfehlungen für das Unfiltrat und Filtrat zu geben sowie die Analysenverfahren zur Bestimmung relevanter Kenngrößen festzulegen.
