More about the book

Abstract: Seven expert reviews for food and nutrition scientists and policy-makers explore various programs, policies, and food technologies for improving nutritional status and preventing diet-related diseases. The first paper provides a critical survey of how governments influence the food and nutrition policy in 16 developing and developed countries. Two subsequent papers detail the incidence of nutritional problems and related diseases in Hawaii, Samoa, and southern Brazil, and offer proposals for immediate intervention and long-term policy improvement. Three additional reviews address special nutrition topics relating to food technology: 1) lysinoalanine, a toxic, non-natural amino acid that may occur in processed protein-based foods; 2) the technology of supplementation and therapeutic applications of vitamin A; and 3) use of sweeteners in the Western society. A final review discusses animal research focused on the development of strategies to facilitate appropriate food selection at the weanling age. (wz)
